One way you can extend the size of an island top is to extend beyond the end of the cabinetry and add a centre post. We did for this Wiarton customer; expanding the usefulness of their island. See pics below!

While most of customers opt for the epoxy + polyurethane 2 stage finish [or a light epoxy thickness, medium thickness option], for the most extreme rustic look, we can skip the filling stage completely. While this will forgo a lot of practicality in terms of cleaning and durability, it may be the best option; just depends on how you are going to use to the table. Our reclaimed wood boardroom tables are custom built from scratch. To seat two chairs at a table end, consider a wider than standard width. For this St. Jacob’s boardroom table project, the customer opted for a 72″ width to comfortably seat 2 large office chairs at the ends. See pics below:
